Origin and distribution:

Europe, North Africa (Maghreb) and Asia, naturalized in North America.

Ecology:

Plant of limestone, dolomite or clay. Plant can be found at altitude until the upper limit of cultures. Relatively versatile plant.

Description:

It is an elegant herbaceous biennial plant, built, fifty to one hundred fifty centimeters tall.

The root is type swivel, very deep, slender, black on the outside and white on the inside. Injured, they take a leave white exudate relatively bitter.

The stem is more or less flexible, slightly woody, hail, crossed from bottom to top. Highly branched, it carries relatively few leaves.

The basal leaves are deeply cut, leaves intermediaries, whole lanceolate, embracing the stem, the upper leaves are reduced to bracts

The inflorescences are of the head. They consist of blue ray florets. The bracts are arranged in two rows of eight and five parts. Details of the ligule lanceolate corollas and are completed by an indentation fine.

In the sunshine, flowers radiate, while during the night or with foggy weather, they move closer to each other.

Pollination is entomophilous or autogamous. Sexuality is hermaphrodite. The fruit is a achenes. The spread of seeds is provided by gravity.

Usage and characteristics

It is the friend of the liver: plant choleretic, diuretic and laxative. Its stem is rich in phosphorus. In times of famine, they were used to replace coffee. In some regions, it continues to be used as a coffee substitute, it is better appreciated than the latter.

It is at the origin of the Beard of Capuchin of chicory coffee and chicory and endive, chicory in Italy (Treviso, ...), endives and many other salads. Their common characteristic is a certain bitterness.
