Well to answer your Q, I use Continuous for larger birds in flight, for the smaller ones I mainly use Single, as rightly observed by you, it will un-doubtly keep switching through the tiny branches/leaves.
you can keep the Single Point focussing to the min. value of 6mm that will help.
I prefer keeping a fast Continuous Drive when tracking or panning a subject, in combination with Burst Mode :)
More importantly try learning the bird than just tracking it with your focus, I tend to study the bird on its behaviour, I'm sure you'll make good shots once you grasp that :D
