I totally agree with you...when doing the PP work I noticed how great looked the branch and its textures, and wondering why the bird's head not so much...you stated it very clearly.
About the noise I applied a little noise reduction, just enough to keep a proper detail's levels.
Well, this process -of get used to the dslr and lens- seems to be a long one for me...the good thing is that I'm enjoying it a lot, and hopefully some day will produce a more steady images...hmmm, hopefully!!!
